Modified Baigle

Dain's current favorite Modified Baigle (Reduced to make 4 sticks.)

Crust - 1/2 lb unsalted butter 2cups flour. 1/2 cup water. Mix - let stand overnight.
Filling - 1/2 lb almond paste. 1 cups sugar. 1.5 eggs slightly beaten. (Use the egg yolk for the 1/2 egg saving the egg whites for the end.) 1 tsp almond extract, 1 small lemon (zest and juice. Or 1/2 of larger lemons). Mix and let stand for an hour.
Roll out dough in long narrow lengths. Put in filling. Seal edges with H2O. Make small slits on top about 2 inches apart and brush with unbeaten egg white.
Bake 425 oven for 10-15 min and then 350 oven for 15 min until nicely browned. Makes 4 sticks.

Baigle Experiments.
* Addition of almond slivers/piece's to filling. (Almond piece's ended up being to soft, future experiment, look into how to add them to the filling but keeping them firm and crisp or maybe just add them to the outside of the crust.)
* Coconut Oil instead of butter. (Firmer dough to roll out. Resulted in a nice flaky crust.)
* Powdered Sugar instead of flour to roll out the dough. (Seals don't hold as well, need to put more effort into water sealing. Adds a slight sugar glaze crisp to the crust.)
* 1/2 (Full Lemon for recipe of 8) Lemon zest and juice instead of lemon extract. (Stronger lemon flavor. I prefer this and have made it a standard with my Baigle.)
* 1 Lemon zest and juice instead of lemon extract. (Super lemon flavor.)
* Adding almond extract to filling. (Not necessary, but I like it.)

Thoughts for future experiments:
* Amarillo addition to filing.
* Cream cheese lined with filling.
* Honey Sugar combination.
